Black-eyed peas have a very distinctive flavor that is completely different from most beans, to my palate (and I like them). A cow-orker of mine grows a variety of cranberry beans her family has kept secret for many years (she's from Arkansas) and they definitely taste different from and better than ordinary beans to me. I also think black beans taste different from and worse than other dried beans.

The other differences I notice are mostly texture.
