Canning was a thing my mother used to do when we lived in Saskatchewan and we had a yard big enough to support a garden with which to grow the veggies and fruit that would be useful if canned. Living in one of the wrong parts of suburban Ottawa-Gatineau as we now do, canning is not an option now. My sister might have better luck with her own yard, in another neighbourhood.
